His hair is not long enough to be tied up.  You are thinking of Graziano di Prima.  He is the other Italian Strictly pro, but the one who has longer hair.

Wrong. Gio often had a bit of his hair up in a little ponytail/man bun in his training videos, I always assumed it was done a bit jokingly, but he did all the same.
